Strawberry Recipe

Ingredients:

  • 8 slices stale sourdough or ciabatta bread
  • 250g fresh strawberries, hulled and sliced
  • 100ml white wine vinegar
  • 2 Tbsp caster sugar
  • 200g ricotta or soft goat cheese
  • 1 Tbsp honey (plus extra for drizzling)
  • A few fresh basil or mint leaves, finely sliced
  • Salt, to taste
  • Black pepper, to taste

Method:

  1. Combine the white wine vinegar and caster sugar in a bowl. Stir until the sugar has fully dissolved. Add the sliced strawberries and let sit for 30 minutes to pickle.
  2. Meanwhile, whip the ricotta or goat cheese with 1 tbsp honey until light and creamy. Set aside.
  3. Toast the bread slices in a pan, grill, or toaster until golden and crisp.
  4. Once the strawberries are pickled, remove them from the liquid and let drain briefly.
  5. Spread a generous layer of whipped cheese onto each toasted bread slice.
