Ingredients:
- 8 slices stale sourdough or ciabatta bread
- 250g fresh strawberries, hulled and sliced
- 100ml white wine vinegar
- 2 Tbsp caster sugar
- 200g ricotta or soft goat cheese
- 1 Tbsp honey (plus extra for drizzling)
- A few fresh basil or mint leaves, finely sliced
- Salt, to taste
- Black pepper, to taste
Method:
- Combine the white wine vinegar and caster sugar in a bowl. Stir until the sugar has fully dissolved. Add the sliced strawberries and let sit for 30 minutes to pickle.
- Meanwhile, whip the ricotta or goat cheese with 1 tbsp honey until light and creamy. Set aside.
- Toast the bread slices in a pan, grill, or toaster until golden and crisp.
- Once the strawberries are pickled, remove them from the liquid and let drain briefly.
- Spread a generous layer of whipped cheese onto each toasted bread slice.
